You're right that we should think about what to do with the minor houses/the hiosues whe know little of. For Jasts or Hetherspoon's we'd even could include info for the minor characters of their house, but for others all we have is a name, and an uncannon heraldry from westeros.org.

I'd say the best thing would be your second suggestion. Create pages such as "[[Houses from the Stormlands]], and include there all the minor houses with the few bits of info we may have. She offered the captains gold and plunder if the Stormcrows came over to her side, but was rebuffed by Prendahl.
