Umma is a cook in the House of Black and White in Braavos.

Recent Events
A Feast for Crows
During her training at the House of Black and White, Arya Stark is sent to the kitchens to help prepare food, helping Umma. Although the cook talks to Arya, the Westerosi is unable to understand her. Umma is the only person in the House of Black and White who gives Arya her name. Umma sometimes smacks Arya with her spoon when the girl gets in her way.[1]
While serving as Cat of the Canals, Arya still cooks with Umma sometimes. One one occasion the cook saves a piece of nice fried cod and some mashed yellow turnips for the girl.[2]
A Dance with Dragons
Umma begins calling Arya "Stick" after the girl is blinded. Umma bakes bread in the morning and serves salt-crusted crabs for supper one evening.[3]
Quotes
She got along well enough with the cook. Umma would slap a knife into her hand and point at an onion, and Arya would chop it. Umma would shove her toward a mound of dough, and Arya would knead it until the cook said stop (stop was the first Braavosi word she learned). Umma would hand her a fish, and Arya would bone it and fillet it and roll it in the nuts the cook was crushing.[1]

She knew the way to the kitchens, but her nose would have led her there even if she hadn't. Hot peppers and fried fish, she decided, sniffing down the hall, and bread fresh from Umma's oven. The smells made her belly rumble.[3]
